Carrot Fennel Salad

6 carrots, finely sliced
6 sprigs mint
4 green onions, chopped
1 fennel bulb, finely sliced
4 Tbsp lemon juice
2 Tbsp flax oil
½ tsp Celtic sea salt

Combine carrots, mint, green onions, and fennel in a large bowl. In a jar, combine lemon juice, flax oil, salt; cover and shake. Pour over
salad and toss gently.
