Coconut Cream



(This is an awesome recipe. Make sure when you are picking the coconuts, that you give them a shake to ensure there is a lot of liquid inside. Also check that all three "eyes" of the coconut are solid and not mushy to the touch so you'll know the its fresh.)

Using a single or twin gear juicer, cut open of the eyes of the brown mature coconut, and drain the coconut "water" in a glass. Drink now or save it for another recipe.

Open the coconut and carefully remove the white flesh from the shell. Our favorite method to do this is to place the coconut in a heavy cotton bag, and bang it against a concrete surface until its well broken up. Its pretty easy then to pry the white flesh off with a knife.

Put the blank in your juicer and run the coconut flesh through. (Its OK to leave the thin brown skin on.) Switch over to a juicing screen. Run the shredded coconut through a second time. The juice that comes out will be the best coconut cream you have ever tasted! Rich, creamy, & decadently raw!
