1 c almonds, soaked 4-8 hours
12 small dates or 5 large Medjool Dates
3 Tbl carob powder
4 Frozen bananas broken into pieces

Pour one cup water into a Vita-Mix or blender with the almonds (organic almonds taste superior to non organic, often with a marzipan like flavour). Blend on high speed until nuts are completely broken down into milk. Pour the almond milk through a strainer or mesh bag (such as a sprouting bag) and collect strained milk in a jug or bowl. Rinse blender to remove remainder of nuts. Pour the newly strained almond milk back into the blender. Add another cup of water, all of the dates, the carob and the banana pieces (slightly defrosted if not using a Vita-Mix to avoid damage). Blend all ingredients thoroughly until thick, whipped ice cream consistency is achieved. Pour into two tall glasses and enjoy !!!) Use almond pulp to make cookies later.

Variation 1. Add some Vanilla, instead of carob or any other flavouring of your choice.

Variation 2. This shake is also delicious with just bananas, nut milk and dates.

Serves 2

Contributors note: Everyone who has tasted this rich drink loves it, Its even better than the thick chocolate shakes we used to slurp on in fast food restaurants-not to mention much healthier !!
