1 c. almonds
1 1/2 c. raw cashews
1 c. dates, pitted
2 T. maple syrup or raw honey
1 T. coconut butter or extra-virgin olive oil
1 T. non-alcohol vanilla extract
1/2 c. raw carob powder
1/4 c. organic cocoa powder (or 4T additional raw carob powder)
pinch sun-dried sea salt
Soak almonds in 2 c. water overnight (about 6-12 hours). Drain and rinse. Soak cashews in 2 c. fresh water for 1 hour. Drain and rinse. Soak dates in 1 c. water for 15 minutes or until very soft. Drain soak water and set aside.
In a food processor, chop almonds and cashews into a fine meal. Add dates, maple syrup or honey, coconut butter or olive oil, and vanilla. Blend into smooth paste. It may be necessary to scrape the sides of the
with a rubber spatula and continue to blend for a smooth consistency. Add several tablespoons of the date soak water as needed. Mix in by hand carob powder, cocoa powder and sea salt.
Dehydrate at 108 degrees for 12-24 hours until quite dry.

* Comments: Michelle notes that maple syrup is not raw - use the honey and the cocoa powder is not raw - use the additional carob powder. |
