Heavenly Carob Truffles

1/2 cup Almonds soaked 12-48 hours and Dehydrated 8 hours.
1/2 cup Pecans soaked 6-8 hours and Dehydrated 8 hours.
1/2 cup Pine Nuts
1 cup Medjool Dates
2 tablespoons Raw carob powder
1 teaspoon vanilla
1 cup Shredded Coconut

Process almonds, pecans and pine nuts in a food processor using the "s" blade. Slowly add dates and continue processing until the mixture forms a ball. Add carob and vanilla; mix well. Form mixture into ½" balls and roll in coconut. Refrigerate for 2 hours, serve & Enjoy!
