1 mango, diced
2 cloes garlic, minced and mashed with 1 tsp celtic sea salt
2 large tomatoes, diced
2 green onions, diced
1/4 sweet green pepper, diced
1/2 large red sweet pepper, diced
1 jalapeno pepper, diced fine
fresh parsley to taste (or cilantro)
2 T. olive oil
1 tsp fresh mint
juice of 1 large lime
Mix, let set for few hours, enjoy.
