Coconut Macaroons

Appliances you'll need (exact brand not important):


Food Processor


Dehydrator


If you don't have a dehydrator, you can still make this recipe. See bottom of page for more info.


Ingredients:

2 1/4 c. shredded 
unsweetened coconut

2 Medjool dates (pitted)

1/2 c. pure honey

1 tsp vanilla extract or 
1/4
vanilla bean

Directions:

Add ingredients.
1.) Add all ingredients to food processor.

 

Blend ingredients.
2.) Blend ingredients until fully mixed.

Scrape sides.
3.) Use a rubber spatula to scrape the sides of the bowl to make sure ingredients are well mixed.

 
Finished mixture.
4.) Finished mixture should easily fall off the sides of the blender bowl.
 

Form mixture.
5.) Form mixture into 1 large ball - sort of like kneading dough, ensures coconut's well coated.
Hint: Add more honey to mixture if, when you make a ball, it doesn't easily stick together.
  

 Pinch
6.) Pinch off about a tablespoon worth of mixture.

 


7.) Roll into small balls.

 

8.) Flatten to 1/2 - 3/4 inch. 


9.) Arrange on mesh dehydrator sheet - this is approximate thickness/shape your cookie will have. 


10.) Your recipe should yield approximately 18-20 cookies, depending on the size and thickness.


11.) Place tray in dehydrator and dehydrate at 105 degrees for 8-10 hours (longer if you want a crunchy outer shell - like a cookie; less if you want a chewy macaroony texture - either way is great!).


Enjoy chilled from the fridge, or warm fresh out of the dehydrator. 

Hint: This recipe CAN be made without a dehydrator. Complete Steps 1-8, then refridgerate. Will taste the same, but will come out much more chewy. Still fantastic!

Variations:

Instead of vanilla, blend...
- 3 strawberries for Strawberry Coconut Macaroons (or "Coco Berry Macs" for kids)
- 1/2 orange (juiced) for Orange Coconut Macaroons (or "O' Coco Macs" for kids)
- 1/4 lemon (juiced) for Lemon Coconut Macaroons (or "Le Coco Macs" for kids)
- 1/2 Tbl carob powder for Chocolate Coconut Macaroons (or "Choco Coco Macs" for kids)
- 1 Tbl almond butter 1/4 c. chopped almonds for Almond Coconut Macaroons (or "Nutty Coco Macs" for kids)
